35-year-old cordon-trained estate vines are hand harvested from a 1 acre plot at ~400ft elevation.
Grapes are direct pressed then fermented with ambient yeasts in both tank and barrel. Fermentation takes ~3 weeks followed by Bentonite fining and light filtration.
Aged for 3 months in stainless steel tanks and barrels.
