Just 250 kilometres from Cape Town, at Cederberg, you will find the highest wine farm in the Western Cape. Benefiting from diverse soil types, unpolluted air and free-flowing crystal-clear water, Cederberg Wines’ highest vineyards are situated at 1,036 meters above sea level in a virus-free growing area. The climate is cool continental with a dramatic temperature drop at night in summer and snow-capped mountains in winter. The 200 hectares of arable land is surrounded by 5,300 hectares of majestic rock formations and unspoilt fynbos. Fynbos is the collective name for shrubs like Proteas and heathers typical of the Cape floral kingdom, the smallest but most diverse floral kingdom on earth with well over 8,000 species. 85 hectares are planted to vine. Cederberg's elevation allows the grapes an extra month of hang time prior to harvest which results in greater concentration of flavors. The land sees more rainfall than any other area of the Cape, aiding in fruit ripening and more natural irrigation processes. Being surrounded by preserved natural land, the Cederberg vineyards are extremely healthy and unaffected by pollutants or disease. Cederberg is often used as a nursery for new vine cuttings that are used throughout the country due to the health of its soils.

Vinification

Grapes are hand-harvested at 24.5–25.0° Brix and cold soaked for two days before being inoculated with yeast. During fermentation, color/flavor extraction takes place with regular pumpovers every six hours, along with two to three manual punchdowns of the grape cap. A maximum temperature of 27°C is reached. On completion of fermentation, a further 14 to 18 days of extended skin maceration takes place before pressing and transferring to 225l French oak barrels. Malolactic fermentation is completed in barrel.

Aging

Maturation takes place over 18 months. 83% 1st fill and 17% second fill tight- and medium-grain barrels with medium and medium-plus toasting. Only 23 premium barrels were selected.

Tasting Note

High altitude cabernet vineyards that have a longer ripening period give rise to this phenomenal wine. Loads of blackcurrants with cedar wood undertones on the nose with a hint of smokiness and tobacco leaf, creating a complex wine. Good integration of oak with a velvety finish on the palate. A prime example of a well-crafted South African Cabernet Sauvignon.
