Grapes are harvested from 20 year old vines that sit at an elevation of 1000 meters above sea level.
Vineyards are planted into rocky soils at high elevation.
Wines go through a cold pre-fermentary maceration to preserve primary aromas, then a series of delestages and pumpovers during fermentation for a more balanced extraction. The juice is fermened for about 14 days at a low temperatures and it is followed by an additional post-fermentation maceration.
The wine ages for 10-11 months in 100% French oak prior to release

What a really exciting nose with citrus, crushed stones, oyster shell, orange rind, raspberries and cedar. A touch of reduction. The palate is very lithe and tightly framed with compact, soft tannins, bright acidity and a tangy finish. Drink now. --James Suckling, April 2018
