“This is 70 percent garnacha and cariñena, from vines planted in the 1960s, blended with young-vine cabernet sauvignon. It shows plenty of ripe red fruit and notes of chestnuts, tea leaves and cloves. It’s impressive, with youthful tannins and tight acidity, needing a few years to mellow. Then serve with roast pork loin.”
