Winery Overview
This cuvée was born from the meeting of Eric Louis, Sancerre wine-grower and wine-merchant, and Sophie Bertin, a woman deeply rooted in the Sancerre region. Sophie means wisdom in Greek, and Sophie shared not only her wisdom but also challenged Eric in their winemaking. “Dare I not?” Sophie often asked, and Eric would reply, “Challenge accepted!” Together they created a more feminine cuvée with suppleness, subtlety and great elegance. Sophie’s wine was born!

Vinification
The grapes are conveyed to the winery for a gentle pressing. After cold settling, the must is racked off its sediments and impurities, and the alcoholic fermentation follows in thermoregulated stainless steel tanks (16°C to 18°C). The wine rests on fine lees to enhance the texture and intensity of aromas. The first bottling takes place in spring after clarification and stabilization.
