Winery Overview
This cuvée was born from the meeting of Eric Louis, Sancerre wine-grower and wine-merchant, and Sophie Bertin, a woman deeply rooted in the Sancerre region. Sophie means wisdom in Greek, and Sophie shared not only her wisdom but also challenged Eric in their winemaking. “Dare I not?” Sophie often asked, and Eric would reply, “Challenge accepted!” Together they created a more feminine cuvée with suppleness, subtlety and great elegance. Sophie’s wine was born!

Vinification
The grapes are conveyed to the winery for a gentle pressing. After cold settling, the must is racked off its sediments and impurities, and the alcoholic fermentation follows in thermoregulated stainless steel tanks (16°C to 18°C). The wine rests on fine lees to enhance the texture and intensity of aromas. The first bottling takes place in spring after clarification and stabilization.
Tasting Notes
Beautiful pale gold color with emerald glints. This charming wine has a very fruity and fresh palate with aromas of ripe tropical flavors like passion fruit. It is a very refreshing wine. Sublime as aperitif, or with grilled fish and smoked salmon.
