Winery Overview
This cuvée was born from the meeting of Eric Louis, Sancerre wine-grower and wine-merchant, and Sophie Bertin, a woman deeply rooted in the Sancerre region. Sophie means wisdom in Greek, and Sophie shared not only her wisdom but also challenged Eric in their winemaking. “Dare I not?” Sophie often asked, and Eric would reply, “Challenge accepted!” Together they created a more feminine cuvée with suppleness, subtlety and great elegance. Sophie’s wine was born!

Vinification
As soon as the grapes are picked, they are conveyed to the pneumatic press in order to preserve their aromatic potential. Then, the cold settling and the alcoholic fermentation follows, which extends for 4 weeks in thermoregulated stainless steel tanks. No malolactic fermentation and no oak barrels are used, in order to preserve the freshness.
Tasting Notes
With its magnificent subdued yellow color with a subtle glint of green, this Chardonnay is dominated by the aromas of fruits such as citrus, yellow fruits like peach and subtle hints of white flowers. The palate is wrapped, balanced and elegant combined with a zesty freshness
