Compared to the almond blossom, the bloom of wild chrysanthemums in Mallorca is almost unknown. However, every year in early April, they transform vast fields into a sea of white and yellow flowers, offering an impressive natural spectacle.
But it’s not just wildflowers that bloom under the Mallorcan spring sun; there is also a very special plant of great importance to the island: Wild fennel, or Fonoll in Mallorcan. Its delicate anise aroma is floral and almost a bit buttery. We distilled an anise base and directly macerated a sprig of wild fennel in the bottle.

This liqueur is unfiltered and made with 100% natural ingredients. Turbidity and sedimentation may occur, serving as evidence of its artisanal production process. Due to its high content of essential oils, traces may float on the surface.
Producer Overview
Gin Eva is an artisan gin distilled in Mallorca, but mostly it is a tribute to the Mediterranean spirit and its people. We created our gin to capture all the Mediterranean flavors we love and we are happy to share it with you.
The first gin (Mallorca's first gin ever) was produced in our distillery in 2012, when husband and wife team Eva Maier and Stefan Winterling started experimenting with spirits and botanicals in their small garage, surrounded by a junkyard and a cement factory.
Ten years later we moved into a new facility in 2022, still in the commercial area of Llucmajor, where we feel at home. That’s why we call our distillery “Casa Eva”. Our doors are always open and we look forward to your visit.
In addition to our classic Gin Eva with the red label, we created other special editions. The first edition is our olive gin, “La Mallorquina”, which won first place at the World Gin Awards in London in 2019 as World’s Best Signature Botanical Gin. At the same time, the red label was voted the best gin in Spain.
The unique taste of Gin Eva comes from Mallorcan juniper berries, botanicals and locally grown citrus fruits.
All ingredients are distilled in a traditional copper still by Eva and Stefan, a Catalan oenologist and a German winemaker.
