Baron de Sil is the newest passion project of third generation grape grower and vineyard collector, Oscar Montaña. With many abandoned wineries left behind from the Galician boom of oughts, Oscar took his time to plant his roots in the remote hillsides of Ourense in DO Valdeorras. Average age of the vineyard: 26 years. Average altitude of the vineyards: between 540 and 750 meters
Soil: Granitic-slate
Cold maceration for 4 to 6 hours. Fermentation on lees in stainless steel, followed by partial fermentation in 500-liter barrels at a controlled temperature.
Barón do Sil is a fantastic Godello aged on its lees, barrel-aged for a unique elegance and smoothness. The nose is complex and elegant, with aromas of minerals, reineta apple and dried flowers. Mineral and complex on the palate, full-bodied. A must-try if you love the Godello variety. Enjoy with Vegetables, salads, seafood and fish dishes.
