    Winery Overview

    A family story above all. As far back as we go back in family history, the Ellevins have always worked the vineyard. It was in 1975 that Jean-Pierre developed the Domaine and specialized in the vinification of Chablis, dedicating it to Chardonnay. After his studies and various trips around the world, his son Alexandre, the fourth generation, joined the farm in 2003 to take care of winemaking. The quest for quality allows us to offer you an exceptional range of Great Wines. The estate is headquartered in Chichée, south-east of Chablis, and the 16 ha of vines extend over both banks of the Serein.

    Vineyard

    The estate cultivates 16 hectares of vines exclusively in Chardonnay, which produce dry wines of excellent quality with yellow-green reflections, notably Chablis 1er Cru Vaucoupin Vieilles Vignes. This cuvée whose harvest in October allows for very ripe grapes and aging in oak barrels for a year enriches its aromatic range.

    Concerned about our environment, we use plowing to limit the use of phytosanitary products in our soils and crops.

    Vinification

    Fermented with indigenous yeasts for 15 days at 18 to 22°C. Malolactic fermentation for 15 days at 18 to 22°C

    Aging

    Aged in stainless steel on fine lees for 6 to 12 months.

    Tasting Notes

    A very fresh, lively and mineral nose. Notes of flint, green apple, lemon. Excellent aperitif or enjoyed with asparagus, salads, grilled fish, shellfish, and poultry dishes. Pairs well with spicy foods as well, such as curry.
