Winery Overview
Vibrant young winemaker Jean-Francois Bordet’s family has been making wine in the Maligny village of Chablis for 19 generations. Records go back to the 1590’s. The estate includes 14 hectares of vineyard in Petit Chablis, Chablis Villages, and Fourchaumes. In addition, Vaillons 1er cru and Vaudesir Grand Cru are purchased from neighbors who farm organically. The vines range in age from 15 to over 100 years old. The soil is Kimmeridgian sea bottom loaded with limestone and chalk. The sparkling new cellar is state of the art with horizontal temperature controlled stainless steel tanks. Except for the Grand Cru, all elevage is done in stainless steel with 6 months aging sur lie with batonage. The Grand Cru is aged in small wooden foudre. The style of the wines is classic Chablis with clean fruit, fresh bright acidity, and a clear sense of minerality from the abundance of fossil shells (especially ammonites) in the soil.
