    Winery Overview

    In 1981 David Jones and his wife Jeanne bought a 65 acre parcell in the heart of the famed Apple Hill region of the Sierra Foothills of El Dorado county. David and Jeanne founded Lava Cap with the intention of creating wines grown in our unique volcanic soils imparting rich and vibrant flavor profiles reflective of the land. The property back in 1981 was all planted to Barlett Pears and was one of the highest producing orchards in the area. They have since purchased two more parcels, a 17 acre site that has been planted to Syrah and Zinfandel. And a newer 20 acre site that were in the process of readying for planting next year . All of the estate vineyards are planted in unique volcanic soils weathered directly from the "Lava Cap." The name Lava Cap dates back to the gold rush, where miners coined the term for the volcanic debris flows, overlieing gold bearing river bed gravels.


    60 acre vineyard with three different parcels. 2400'-2700' elevation. Average age of vines is 30 years. Volcanic soil.




    Hand Harvested


    Hand sorted before destemming. Ambient yeasts used. Malolactic fermentation started in stainless tanks before going to barrel.


    18 months in French and Hungarian oak barrels and then 3 months in bottle.
